Oatmeal & Banana loaf

Oatmeal & Banana … slices


I usually make banana bread, it’s a moist and crumbly one which you can sit and finish on your own in one sitting, and why not? I say. Then when I came across this recipe I loved it too. The brown sugar adds the slightly caramelized flavor. Always use overly ripe bananas . You can use cinnamon, it works like magic. It’s slightly denser than the other recipe.

Ingredients:

  1. Light Brown sugar – 215 gms

  2. Unsalted Butter (at room temperature) -115gms

  3. Large eggs-  2

  4. Vanilla essence – 1 tsp

  5. Ripe bananas, medium sized- mashed – 3

  6. Oats (Rolled oats) – 80 gms

  7. All-purpose flour- 240 gms

  8. Milk – 125 ml

  9. Baking powder – 1 1/2 Tsp

  10. Baking soda- 1/2 Tsp

  11. Salt- 1/2 Tsp

Preheat the oven to 175 C. Grease a loaf pan with butter or oil and set aside.

In the bowl of your mixer, beat the brown sugar and butter until combined. Add the eggs, one at a time, then the vanilla.

Add the eggs, one at a time, it should be well incorporated before you add another. hen the vanilla.

Add in the vanilla and add the mashed bananas and mix in well.

In another bowl sieve flour, baking powder, baking soda and salt. then add in the oats and mix well.

Add flour and milk alternating part by part till all used up and mixed in well. do not over mix

Spoon the batter into the prepared pan and bake for approximately 60 minutes, or until a cake tester inserted in the center come’s out clean. Cool the loaf in the pan on a cooling rack till just warm, then remove it from the pan and allow to finish cooling on the rack before slicing.

Can serve as it is or with Jam…
